Life Together: Evie Brassie’s recipe for “Gifta”

Several people who ate this wonderful Thanksgiving/Christmas side dish at one of our Wednesday fellowship meals asked for the recipe for this Scandinavian dish. It’s so good (and easy) to make you’ll probably want to eat it all year round.  You might even want to share it with all your friends.

“Gifta”

  1. Prepare cranberry relish according to directions on fresh cranberry package. I add the zest of one orange to 2 bags of cranberries.
  2. Whip one pint heavy cream, ½ tsp vanilla and ½ cup powdered sugar till stiff peaks form.
  3. Barely crush 1 sleeve salted saltine crackers (don’t want tiny pieces) and drizzle with ½ cup to ¾ cup melted butter. Toss to coat.
  4. Begin layering in glass bowl: cranberries, whipped cream and cracker crumbs. The deeper the bowl the more layers you will have.
  5. Finish with cracker layer on top. Chill to serve.

This needs to be made right before serving.
